Gooey Messy Chocolate Fudge with Walnuts
1 Baker's Unsweetened Chocolate Square
6 packets artificial sweetener
1 - 1 1/2 tbsp heavy whipping cream
Optional: 1/2 oz chopped walnuts
Directions: I use microwavable safe bowls for easier clean up. This one's really messy! Melt the chocolate square in the microwave for two and a half minutes. Stir until completely dissolved. Add splenda and heavy whipping cream. Stir again until completely blended. Add walnuts if desired, but you can also use any kind of nut you want. It helps raise the fat calorie ratio. This can be eaten right away hot or refridgerated until later.
Easy Beef Stroganoff
1/4 pound ground beef
1 tbsp dried chopped garlic
1 tbsp dried chopped onion
1 tbsp diced mushrooms
2 tbsp full fat sour cream
1/4 tsp beef boullionne
1/4 tsp pepper
1/4 tsp onion powder
1/4 tsp paprika
Directions: This makes only one serving, so adjust according to your needs. Brown hamburger without draining fat. Turn heat down and add chopped garlic and onion. Mix around. Add boullionne, pepper, onion powder, and paprika, stir well. Scrap contents of frying pan into bowl. Add sour cream and mushrooms. Enjoy!
Chocolate Whipped Cream Mousse
1/2 cup heavy whipping cream
2 tbsp unsweetened cocoa powder
6 packets of artificial sweetener
1 oz of chopped nuts of your choice - optional
Directions: Pour cream, cocoa, and sweetener in a bowl and beat with a blender until completely blended and stiff. This can be enjoyed plain or with chopped nuts. You can blend the chopped nuts into the cream entirely, or you can sprinkle them on top or even make a layered parfait out of them. This recipe is very versatile and satisfying.
Ketogenic Chocolate Bars
1 Baker's UnSweetened Chocolate Square
6 packets artificial sweetener
1 oz chopped nuts of choice - optional
Directions: Find yourself something that can act as a "mold" for a chocolate bar. I used doubled tin foil, made a tiny little "box" about the same size as a Hershey bar and lined it with wax paper, folding creases to conform to the edges. Melt chocolate square in microwave, I had to put mine in for two and a half minutes for it to mostly melt. Stir until all the chocolate is blended and melted. Pour sweetener packets and stir. This will make the chocolate taste like dark chocolate, if you want it sweeter I suggest you add more. Stir chopped nuts into the mixture or leave plain for a chocolately treat. Pour into the little mold and spread as evenly as possible. Refridgerate or freeze until solid again. Enjoy!
Taco Seasoned Beef
1 packet NO-Sodium beef seasoning
1 tsp sodium beef buillionne powder
1/2 tbsp chili powder
cumin
1 tsp garlic, salt, and pepper seasoning
1/2 tsp garlic powder
onion powder
paprika
cilantro
Optional: Dehydrated onions and/or garlic
Directions: Put all dry seasoning in a bowl and stir well with a spoon until blended. Brown 1lb ground beef. Spread meat in pan until even. Shake desired amount of dehydrated onions and/or garlic over hamburger. Take bowl with seasoning and shake carefully over the meat, coating the meat entirely. Stir well, and keep watching the water level as it will cook off faster than conventional taco seasoning. Turn heat off, serve hot with lettuce, tomato, sour cream, guacamole, and cheddar cheese.
Crabby Patty Cakes
1 can crab meat
2 tbsp mayonnaise
1 tbsp Old Bay Seasoning
1 cup crushed pork rinds
1 tsp Italian seasoning
1 Egg
1/8 tsp ground red pepper
1/2 tsp black pepper
Optional: chopped celery, olives to taste.
Directions: Put all ingredients into a bowl and mix well until completely blended. Try to separate into four equal portions in the bowl for frying. Pour a thin coat of oil in a frying pan, and carefully drop the portions of mixture into the center. Flatten into a patty with spatula. Fry until crispy on both sides. Can be eaten with low-carb tartar sauce made out of mayonnaise, salt, pepper, and sweet relish.
Fried Chicken
3 oz bag of crushed pork rinds
2 eggs, beaten
1/2 tsp Poultry Seasoning
Old Bay Seasoning

Directions: This recipe is best used on small legs and wings. Crush pork rinds into a fine powder, mix with seasonings in one bowl. Beat eggs in another bowl. Dip the chicken into the egg, then roll in the seasoning. Fry in a deep skillet filled in oil until golden brown and crispy. Put cooked chicken onto paper towels to absorb excess oil.
Hot Cocoa
3/4 cup very hot water
2 tbsp powdered cocoa
4 packets of splenda
3/4 cup heavy cream
Directions: Put splenda and cocoa at the bottom of a 12oz hot beverage cup. Pour hot water in, stir to dissolve cocoa and splenda. Pour heavy cream, mix well. Put in microwave for 30 seconds until hot. Enjoy!
Low Carb No Bake Cheesecake
Filling:
8 ounces cream cheese
1 egg
1 cup hot water
3 teaspoons gelatine
20 packets of sugar substitute
1 cup cream
5-6 tablespoons cocoa powder
Crust: 1 cup ground almonds, 2 tbsp melted butter. Mix and spread/press into a pie pan, covering at least the bottom of the pan.
Directions:
Melt gelatine in hot water, let it cool. Soften cream cheese. In mixer, whip up cream cheese, egg and sweetener until well blended. Add cocoa and gelatine mixture, whip well. Whip and cream and mix in well. Pour into dish and refrigerate until set.
Deviled Eggs
2 eggs
2 tbsp mayonnaise
1 tsp mustard
1/4 tsp pepper
Paprika for topping
Directions: Put eggs in cooking pot and fill with water until the eggs are covered with one inch of water. Bring to a boil, turn off heat, and cover. Let sit for 11 minutes. After eggs are hard boiled and peeled, cut in half and scoop out yolks. Mix yolks with mayonnaise, mustard, and pepper. Stuff empty egg whites with the yolk mix. Shake desired amount of paprika over top.

These sound great, Margi. I have a heck of a time peeling hard boiled eggs without wrecking them. I hear my eggs are too fresh.
